A Soup Called Minestrone (with Parsley Pistou)


Now this is  a story all about how
My leftovers got flipped-turned upside down
And I’d like to take a minute, just sit on your throne
I’ll tell you how I made them into a soup called minestrone!

Watermelon Gazpacho


It’s been a little weird not having a kitchen. But, honestly, not as weird as I had expected. Actually, it’s been kinda fun.

Well, we’re not living completely kitchenless. That wasn’t an option. We need to at least be able to make coffee in the morning. So I created a mini-kitchen, of sorts, in the living room.

We stuck the fridge in a corner, and next to it, a table with all the essentials: a cutting board, my knives, a French press, a tea pot, a toaster oven, a Nutribullet, and even a hot plate that doubles as a turn table when the sun goes down. Continue reading Watermelon Gazpacho

French Tomato Tart

It’s official: I no longer have a kitchen.

I know, man. It’s a lot to wrap my head around.

Last week, I woke up dreaming about this beautiful French tomato tart that I had made a few years ago. You guys dream about food, too, don’t you?

It had a crispy, buttery crust, tangy Dijon mustard, perfectly ripe tomatoes, and big rounds of creamy goat cheese – that to the unknowing eye looked a little more like seared scallops than cheese (oops, sorry Chaser). Continue reading French Tomato Tart

A little over one year ago, I started this blog as an outlet to write about my ridiculous fascination with food.

Then, I took a brief hiatus to film a little show called Food Network Star, and spent the last 11 weeks writing recaps about each episode. Now that winter seems to FINALLY be behind us, I got around to planting my spring garden this week. I planted all sorts of goodies: English peas, sugar snap peas, green beans, RAMPS, chard, kale, butter lettuce, arugula, mesclun mix, Romanesco cauliflower, broccoli rabe, strawberries, and a whole mess of herbs. So.. I started a blog.

A few years ago, I set out to start a blog. A food blog! I was going to call it “Too full for school”.. clever.. right? No, it was a ridiculous name for a food blog. Very cheesy.. and no one would “get it”… And my writing- terrible! And heck, what do I know? No one would want to read what I have to say.  Plus, where will I ever get the time to keep up with regular posts?? I came up with more and more excuses not to write a blog. So I never did.

But guess what? Something came over me in the past week, and I decided, dammit, I’m starting my blog.  With friends and family constantly asking me for cooking tips and recipes, I figured there is at least some interest! Right? I owe it to them. And I owe it to myself! So here I am. Self consciously writing a tell-all, food-filled, time-consuming, grammatically incorrect, politically incorrect, perhaps even culinarily (i know, its not even a word) incorrect blog.
