Crispy Chick Peas with Olive Oils from Spain (Sponsored Post)

The popularity of the Mediterranean Diet has exploded in recent years, and for good reason. People living along the Mediterranean Sea have known for a long time that a diet high in unsaturated fats, vegetables, and fish is loaded with a slew of health benefits. Jerk Roasted Pumpkin Seeds

“You are what you eat.”

This saying always got on my nerves.

If it were true, then I would be a walking talking tomato, with slices of pizza for arms, a scoop of ice cream for a head and cookies for feet.

But nope, I’m 100% human. And for the record, while I do love a good cannibal joke, I’m proud to say I’ve never eaten another human. Continue reading Jerk Roasted Pumpkin Seeds

Sesame Crusted Bristol Bay Wild Sockeye Salmon

In case you aren’t already in the know, my fierce farm-to-table friend and fellow Food Network Star Emma Frisch writes a fabulous food blog called Frisch Kitchen. Emma’s blog focuses on what she calls “food with roots,” and recently she started a brilliant campaign called #5days5ways, where she highlights one ingredient over 5 days and shows 5 unique ways to use it.

Last week, Emma rolled out #5days5ways for Bristol Bay wild sockeye salmon in order to draw attention to the current problems they are facing in the bay. She asked ME if I wanted to participate by submitting a recipe and doing a cross post on Frisch Kitchen.  Continue reading Sesame Crusted Bristol Bay Wild Sockeye Salmon

Watermelon Gazpacho

It’s been a little weird not having a kitchen. But, honestly, not as weird as I had expected. Actually, it’s been kinda fun.

Well, we’re not living completely kitchenless. That wasn’t an option. We need to at least be able to make coffee in the morning. So I created a mini-kitchen, of sorts, in the living room.

We stuck the fridge in a corner, and next to it, a table with all the essentials: a cutting board, my knives, a French press, a tea pot, a toaster oven, a Nutribullet, and even a hot plate that doubles as a turn table when the sun goes down. Continue reading Watermelon Gazpacho

Cheeseburger in Paradise

Ok, I know.

I said there were going to be a lot more posts about tomatoes. Don’t worry, they are coming.

This post just couldn’t wait.

Its a post about my happy place.

Its a post about where I live, and how we spend our weekends this time of year.

Its a post, if you couldn’t tell, about cheeseburgers.

So.. I started a blog.

A few years ago, I set out to start a blog. A food blog! I was going to call it “Too full for school”.. clever.. right? No, it was a ridiculous name for a food blog. Very cheesy.. and no one would “get it”… And my writing- terrible! And heck, what do I know? No one would want to read what I have to say.  Plus, where will I ever get the time to keep up with regular posts?? I came up with more and more excuses not to write a blog. So I never did.

But guess what? Something came over me in the past week, and I decided, dammit, I’m starting my blog.  With friends and family constantly asking me for cooking tips and recipes, I figured there is at least some interest! Right? I owe it to them. And I owe it to myself! So here I am. Self consciously writing a tell-all, food-filled, time-consuming, grammatically incorrect, politically incorrect, perhaps even culinarily (i know, its not even a word) incorrect blog. And maybe, juuust maybe, you’ll stick around to read it. (please?) Continue reading So.. I started a blog.
